Breakfast Recipes

Oatmeal Wheat Pancakes

Ingredients:

  • 1/2 cup whole wheat flour

  • 1/2 cup unbleached white flour

  • 1 1/2 cups oatmeal

  • 2 tablespoons baking powder

  • 1/4 cup extra light olive oil

  • 2 tablespoons honey

  • 3/4 teaspoon sea salt

  • 2 cups milk

  • 3 eggs, beaten

  • 1/2 cup frozen blueberries (Optional)

Directions:

In a small bowl, whisk together the egg whites, honey, olive oil and milk. In another bowl, combine the dry ingredients. Add the egg mixture and stir until slightly moistened. Then carefully fold in blueberries.

Cook on heated non stick pan or griddle. Coat pan or griddle with a bit of extra light olive oil.

Makes about 16 pancakes.

Lunch Recipes

French Bread Pizza

Ingredients:

  • • 2 French-bread sandwich rolls, split in half

  • • 1 Jar of organic spaghetti sauce

  • • 1 Package of organic sharp cheddar cheese

  • • 1 Package of mozzarella cheese

  • Chopped onions (Optional)

  • Chopped green bell peppers (Optional)

  • Mushrooms (Optional)

  • Ham slices – Cut Small (Optional)

  • Pepperoni (Optional)

Directions:

Heat oven to 350 degrees. Cut both French breads in half, lengthwise. Place French roll halves onto a cookie sheet generously spread sauce onto each half roll, sprinkle cheeses on top of the sauce. Now you may want to place some ham, pepperoni, or veggies on top of the cheese and then bake.

Makes about 8 servings.

Snack Recipes

Trail Mix

Ingredients:

  • Cheerios

  • Whole Wheat Cereal Flakes

  • Bran Flakes Cereal

  • Granola

  • Oatmeal

  • Pretzels

  • Sunflower Seeds

  • Pumpkin Seeds

  • Dried Fruit

  • Golden Raisins

  • Banana chips

  • Walnuts

  • Coconut Flakes

  • Carob chips

  • Chocolate Bunny Graham Crackers

  • Cheddar Bunny Crackers

Directions:

Combine several of the ingredients below into a large bowl and stir. Give to the children in small plastic cups or Ziploc baggies; store in air tight container.
